Rec your knives?

I'm going to buy DH a new knife set for Father's Day...budget is $300-$400.  We have a set but it's 8 years old and not that great.  He's the one that cooks and I'd like to get him something nice.  Heading to Williams Sonoma and Sur La Table with a friend this week to shop.

Thoughts?

  • I love my Henckels Twin Cuisine because they fit perfectly in my hand and my 6'5" husbands hands with a nice weight. I really like anything Henckels or Wushtof, can't go wrong. 
  • Shun, without a doubt.  We have Henckels and Wusthof santoku knives and we have to have them professionally sharpened 1-2 times a year in addition to using the steel to realign the edge on a regular basis.  Our Shun santoku and boning knives are both going on 1 1/2 years with no professional sharpening - just the steel every few months.  They are pricey, but well worth the investment!
