easy weeknight family dinners?
I am trying to plan out our meals for next week and I am at a loss. I feel like I make the same dinners over and over again (probably because I do). I was wondering what are the easy go-to meals that your families love? It seems like we always have a pasta dish, chicken parm, lo mein, enchiladas, etc - any good recommendations? Thanks!
Re: easy weeknight family dinners?
Here are some of our go-to weeknight meals:
*tacos and fajitas with various fillings/toppings
*Chicken taco bake
*pizza- BBQ Chicken with pineapple
*enchiladas- zucchini enchiladas , creamy chicken enchiladas, buffalo chicken
*chicken paprika
*pepper steak pockets
Hope that gives you some inspiration!
quesadillas are quick and yummy.
we also grill pretty much year round. I like this marinade for grilled chicken. I don't even kabob the chicken. We just grill the breasts. We like this marinade for salmon. If you don't have lemon pepper seasoning. Lemon zest and a little fresh ground pepper is what I use. We also do ribs and beef/turkey burgers a lot.
An easy beef and noodles recipe for the crock pot if you don't mind canned soup: 2 pounds beef stew meat, 1 can golden mushroom soup, 1 can french onion soup, 1 can beefy mushroom soup and 1/4 cup of breadcrumbs. Combine all and cook on low for 8-10 hours. Serve over noodles or rice.
Right now, since it's grilling season we're doing a lot of marinades. This has become a popular one, Cilantro Chicken.
When we can't grill it's usually a lot of stir fry during the week, these two are popular, Shrimp with Spicy Orange Sauce and Healthy Sesame Chicken.
My husband has to have pasta but I make a lot of piccata during the summer to lighten it up a bit.
A new favorite at our house is the quesadilla burger- delish! http://www.skinnytaste.com/2012/04/skinny-buffalo-burger-quesadilla.html
We used turkey rather than buffalo, but it is low cal and very very tasty!!
We also made these onion rings as a side - very crispy and flavorful - hope that helps!

we have:
1. tuna penne pasta -- penne mixed with sauteed pasta, a drizzle of olive oil, salt and pepper, and then some dried basil leaves.
2. chicken/pork stir fry with vegetable -- stir fried pork or chicken with either bell peppers/broccolli/cauliflower and sliced button mushrooms, with oyster sauce and cornstarch dissolved in water, and then later on drizzled with sesame oil. A good rice topping dish.
3. Stir fried tofu drizzled with oyster sauce and sesame oil.
4. Steamed tofu with light soy sauce and sesame oil
