Share your Chicken Salad Recipe

I'm looking for a great chicken salad recipe, something that isn't too heavy. Please share your favorite chicken salad recipe!

  • I bake chicken, then cool it and chop it. I add some light mayo, a liiiitttle mustard, chopped celery, halved red grapes, and a sprinkle of salt, pepper, and celery salt. Love the crunch of the celery and the sweet crunch of the grapes. I occasionally add in place of grapes, which is also good, but it tastes fresher with grapes. 

  • I boil chicken, shred it and add mayo, celery, sweet salad cubes (this is kind of like a pickle relish but chunkier?) and salt and pepper until it suits my taste.

    I will admit up front that I adore Arby's chicken salad so I went in search of a copycat recipe.  Served it at DD's shower and the recipe spread like crazy and 2 of my SIL's use it as their standby.  Doesn't mean I'm an awesome creator, just means I found a good idea and tweaked the copy cat a bit.

    The dressing is half real mayo and half real sour cream - not the light stuff.  I bake my chicken seasoned with a bit of seasoning salt and black pepper.  I add equal parts of celery, apples, and red grapes.  Just before serving I stir in  toasted pecans.  It is amazing on croissants.  The toasted pecans give a much deeper flavor than just regular pecans.  Yum.  

  • I bake chicken, wrapped tightly in foil so that it can't brown or harden. Then I shred it, and mix it with light mayo; a little celery salt; a tiny bit of garlic salt and lemon juice. I split it in half and add mustard to half of it, just because DH loves it with mustard but I like it without. Sometimes I add things like halved grapes or chopped apples to 'my' half.
