I had to take a hiatus from it for work reasons, but you might want to check out my healthy cooking blog- found at http://eleganteating.tumblr.com! Was going to copy and paste some recipes from there, but the link may be more helpful, especially as I'm not sure what your favorite foods are.
I *do* think it's totally possible to not give up cheese without automatically being unhealthy, though. In fact, when I was learning how to cook, my man (then-boyfriend) hung up a little decorated post-it over the sink that said "when in doubt, add cheese." It really does cover up cooking mistakes! So delicious.
We tend to eat pretty healthy with a few splurges. I'm a fan of everything in moderation. Many recipes can also be made healthier by using substitutes. Here are some of our favorites:

Turkey Veggie Burgers
Chicken Paprika
Zucchini Enchiladas
Hahaha, I have a habbit of cooking with cheese too... It's sorta my best friend...
I actually made this Baked Pork Chop recipe the other night that I found in my P90x cookbook... So good.. and really easy! And...totally man friendly to boot.
Yum but chicken breast steamed veggies with little tiny butter.

DH and I were given some yellow squash from a friend's garden and had some big tomatoes that needed using up. I sliced both up into big chunks and baked them with a tiny bit of olive oil, lots of basil, and some salt. DH hates yellow squash but he loved it!
Have you tried Good Housekeeping's Healthy in a Hurry recipes? They're always good. Pork medallions with pears jumps to mind.
