Bike for a beginner?

I've been looking into biking and think it's something H and I could do together...for fun and exercise.  Unfortunately, I know nothing at all about bikes, equipment and so on.  So, where do I start?  I'd like to look for  a used bike just to get my feet wet instead of making a huge investment to find out I (or we) dislike the activity.

We'd be riding on back roads (paved), some paved bike trails and (if it's possible) maybe some dirt trails...not sure if there are bikes that you can ride on pavement and dirt??  So, this being said, what kind of bike would likely work best?  Are there certain things to look for?  Also, I prefer a bike that I wouldn't be all hunched over on due to past spinal surgeries. 

Any info is very much appreciated!
