It has been SO hot here in Colorado- The past 3 days we've been 100+ and we're 95+ until next Monday. We don't have central a/c in our house, so when the oven/ stove top gets turned on, it just gets miserable inside.
I need your no cook and/or all grilling recipes! We're tired of basic salads and grilling meat with foil packets of veggies- We need some variety! Please help
TIA!
Re: No Cook Recipes?
Do you have a crock pot? I love doing a whole chicken in mine!
Another crock pot favorite is sweet and sour chicken.
I do pulled pork in the crock pot.
Layer thinly sliced onions on the bottom, place pork loin/roast on top. Season with salt and pepper.layer thinly sliced onions on top and cover with bbq sauce. Cook on high for at least 8 hours. It is easy and wonderful!!!
We don't have a crock pot, but I think it might be time to break down and get one.
I think I associate crock pots with childhood and gloopy dinners that I hated ;p
Lol I grew up without a crock pot....maybe thats why I love it so!! I would get a 6 quart one, and one that has a timer and switches to warm. I got ours at Costco for $35!! This is the one we have http://www.bedbathandbeyond.com/product.asp?SKU=18700891
You can make just about anything you would make in the oven in a crock pot!
One of my all time favorites is 2 pork loins (or more if you like) and 2 cans of cream of mushroom soup. Then serve over egg noodles yum!!
I can definitely understand that association. Even once I got over my own aversion to crock pots I almost felt like I should hide how much I like to use one because I thought only "old women" used them. SO WRONG! There are quite a few blogs out there that focus on nothing but crock pot cooking for a whole year. Anyway... until you do break down and go there, stock up on things that have been cooked for you like hard boiled eggs & rotisserie chicken or that don't have to be cooked like canned tuna or beans. Unfortunately a lot of no-cook meals are sandwiches and salads but try new combinations. For sides, try steaming your veggies, rice, etc. in the microwave. I'm going to be taking some of my own advice this week as that heat is headed my way after today. Maybe I'll cook for a week tonight while it's still below 90!
I agree, crock pot is the way to go! I'll make a whole chicken in it early in the week so I have cooked chicken for salads, sandwiches, etc. the rest of the week.
There are a bizillion crock pot recipes on Pinterest!
As far as grilling, I'm not that creative. Steaks, burgers, chicken, veggies, the usual. I did post this the other day though and am looking forward to trying some this summer: http://www.foodnetwork.com/recipes-and-cooking/50-things-to-grill-in-foil/index.html
I'd like to try grilling pizza as well!
i agree with the crock pot lovers!
also, do you have a toaster oven? you can make a lot of things in the toaster oven than you can make in the regular oven, i love mine!
i'm also in colorado with no a/c and it has been borderline uncomfortable in the apartment, even with the fans going... my inlaws have a mini swamp cooler they've offered for me to borrow, i might break down and call them up if we don't get a break soon! haha

H and I like to grill chicken leg quarters and season it with Tony's. And then put on your favorite bbq sauce make any sides you want with it. That is our go to summer food.
Also we LOVE frozen pizza and they have a quesadilla maker that you can cook those on and it puts off no heat. You can also make quesadillas on there of course. Also try making different burgers adding stuff in. We make onion burgers it's Lipton soup mix mixed in the meat and put on the grill.
