I am looking for ideas on your favorite shrimp, chicken, and beef chinese dish.

A local place in Chicago makes a honey-pecan shrimp that is to die for. I've tried to replicate it at home and it's just never the same.
Cashew chicken and beef & broccoli are favorites in our house. LO could probably eat the chicken all day, everyday.
I actually did make it a point to make my own favorite recipes at home since the Chinese restaurants in my area are really lacking.That and my DD has a severe peanut allergy so no more Chinese or Mexican restaurants for us!

Beef: Beef and broccoli
I had a chicken stuffed with scallions and cream cheese once at a restaurant. It was breaded like s&s chicken and served with mixed veggies and rice. So delicious.
I also like hot pots and szechuan chicken.
In our house we eat Chinese a couple of times a week. Our favorites are beef and broccoli, black pepper chicken with onions and peppers, the beef and pork dumplings, and the crab rangoon. We also love - and can seem to replicate - the egg cakes.
