Need campfire recipes!

We're going camping tomorrow night- what should I cook?? We have a dutch oven and plan on cooking over the campfire. It's been decades since I've been camping, so simple is probably best..

  • We always do foil packs at least twice. If you do your chopping at home and keep some veggies in the cooler, they come together pretty fast. Last fall, we did some standard camp fare (for us)....english muffin pizzas, foil packs, walking tacos...all stuff that's easy to prepare and fun to eat.

  • If you're lookin' for simple, you can't beat baked potatoes.  Throw 'em in the coals, and when they're soft they're done.
  • DD #1 just had a camp out last night.  They did pita pocket pizzas and banana boats (slit the skin, stuff with chocolate, marshmallows, etc., wrap in foil and put over the fire until warm and gooey).  Last year, they roasted hot dogs and made smores at the fire pit on the last day of camp.
  • Sorry that I'm a little late to respond for your original camping trip.  I agree with Frazzmatazz that foil packs are the way to go and we also cut our veggies ahead of time.  For future camping trips here is an easy family recipe that we have to make every camping trip:

    Campfire Potatoes (serves 1-2 people)

    1 medium russet potato washed

    ? onion sliced

    ? - ? bell pepper sliced

    1-2 Tbs butter

    Mrs. Dash

    Salt

    Pepper

    Foil

     

    At the campsite, tear out two pieces of foil approximately 18? long each.  Slice potatoes (as thin as possible), slice butter, separate and scatter both down center of foil (lengthwise).  Separate and scatter onion and pepper slices on top of the potatoes.  Season with Mrs. Dash, salt and pepper to taste.  Wrap in foil and place directly in/on fire pit rotating occasionally.  Potatoes are done when soft and you can smell the onion (approx. 30-60 minutes depending on fire temp).  Leftovers make great fried potatoes for breakfast the next morning.  :o)  Happy trails!
