Need Dinner Inspiration: Italian Sausage

I picked up Martin's chicken Italian sausage, which is mildly flavored with rabe & provolone. I always grill it for sandwiches, serve it mixed up with pasta & sauteed rabe, or use it on pizza

Does anyone have a different recipe? Maybe a tomato-based based one?  I'm bored with eating it.

  • You could cook it scallopini style, which is tomato-based.  I usually brown the sausage and then take it out of the pan.  Saute some peppers, onions, garlic and zucchini in that pan and then add a can of tomato sauce (my mom uses stewed tomatoes and that's good too) and some red wine and bring up to a simmer.  Then I throw the sausage back in and let it all cook together.  I serve over rice and use the leftovers to make a pizza later in the week.

  • We do something similar to what Tracy suggested...we chop it up, make a red sauce using garlic, onions, stewed tomatoes, veggies, and put it over pasta. It freezes well.

  • I never thought of rice, and I like the idea of adding some veg.  Thanks guys! I have some arborio rice at home and canned tomatoes.  I can grab the veg at the Bala Cynwyd farmers market when I'm done work tonight...and it gives me a reason to stop and grab a bottle of vino from the local winery that has a stall there Party!!!.

    Nice - now I'm looking forward to dinner tonight.

  • I like the scallopini ideas already posted.... you can also take it out of the casing, crumble up the meat and saute with some fresh garlic and/or veggies- I usually do rabe and some fresh provolone, you can do peppers and onions instead- and then either toss with pasta or just eat it like that in a roll

  • I typically make the recipe with sweet Italian sausage, but I think it would work well with the chicken one you described.  There is plenty of sauce with this recipe so I typically serve it over pasta and not in a sandwich.  My very Italian in-law side of the family makes great sausage and peppers, but I think this recipe is way better!
