I used to post here a lot. Then I got KU and had major morning sickness that made frequenting a food board pointless. Then the board got messed up fixed again and here we are. Anyway, I'm glad to see the old format is back even if many of the regulars seem to have vanished.
It has been so oppressively hot here that I have wanted nothing but salads and cold things for dinner. I am starting to get bored with what I've been making. I don't mind cooking aspects of the meal such as poaching chicken for a cold chicken salad--our ac is pretty good--but I don't want any meals that are hot when served if that makes any sense. What are your favorite cold dinners? Thanks!

We've been doing a lot of main dish salads. I've also made "summer spaghetti" at least 5 times since May, that way I'm only really making the pasta.

I love salads in the summer, so maybe I'm not much help ;-)
But what about gazpacho? It's perfect for hot weather. Same with a nice cucumber/yogurt soup.
