Help needed for a SUPER impressive dish (family competition)
My extended family and I are going on vacation in a few weeks and each night, each grandchild is to make a signature dish/meal. The problem? It is July and my only "signature" dishes are meatloaf, soups, stews and chicken piccata. Anyone have any suggestions? I can make anything and if I have a great base recipe, I can make it my own. Thanks in advance!

You can make this by the recipe or put the spices in the crockpot. You can serve over rice, in enchiladas, tacos, over salad, etc.
Salmon is a nice summer dish, and can be made in many ways. Roasting potatoes and crumbling boursin cheese over them the last 10 minutes of baking make an amazing and easy side.
This is exactly what i was thinking. I loooooove me some chicken piccata, and I make it frequently during the summer. If it's grilled, you can make a quick sauce with some lemon and white wine. Not to pimp myself out, but I made this chicken recently, and it was superb.
