meal planning??

I was a total failure last week - it was too hot to cook and I had no interest.

I want to try better this week.

So far, I have:

chicken satay w/ ?

grilled fish & veggies and brown rice

tacos w/ ground turkey

balsamic chicken w/ cous cous and spinach

We also got crabs yesterday and have a bunch leftover - so DH might make a soup w/ them.

  • We kind of failed last week, too.

    Corn on the cob.

    Something with squash - I'm thinking sauteed squash medallions with balsamic vinaigrette with quinoa.

    3 bean salad - kidney beans, pinto beans and garbanzo beans with an oil and vinegar dressing on rice.

    Pasta with broccoli - the pasta may very well end up as pasta with a curry sauce, so something not Italian.

    Watermelon  - either served in chunks with the corn or as a chilled soup.

    My meal planning has been pretty lack-luster lately.

  • I failed last week and I'm going to do it again this week. Out kitchen has so much damn food in it, between the freezers and the pantry, that I feel stupid planning out stuff that requires grocery purchases. I'm still getting fresh produce, dairy, and lunch supplies, but I want to eat out of the kitchen as much as possible over the next few weeks. Freezer stuff lasts a long time, but not for forever - I fear stuff going to waste because we've just held onto it for too damn long. Once we clean out, I'll re-stock before the baby comes so that we have a fresh round of convenience foods on-hand, 'cause I know my cooking is going to be limited.

    • Saturday: Meatloaf muffins, broccoli cheese bacon bake and salad
    • Sunday: Beer-battered grilled cheese sandwiches and waldorf salad
    • Monday: Chicken enchiladas, sweet corn cake and rice
    • Tuesday: Parmesan grilled chicken skewers, rice and veggies
    • Wednesday: Burgers and corn on the cob
    • Thursday: Bacon pancakes with maple peanut butter syrup
    • Friday: Carry out
    • Saturday: Hosting a party
    • Sunday: Not sure, probably something on the grill

  • We had baked ziti one night and beer can chicken this weekend.  We made chicken corn soup with the left overs.

    Tonight we're grilling fish with corn on the cob and zucchini.  We also have lemon garlic chicken and burger for later in the week.

  • Sunday- pineapple chicken and kidney beans.

    Monday- Clean out the fridge night. (We have hot dogs, chicken, sausage) and corn.

    Tuesday-Leftover night. 

    Wednesday- Eggplant Parm 

    Thursday- Chicken enchilda's and rice or beans. 

    Friday- Pizza

    Saturday- BBQ/Out.

  • We're trying to get better with the meal planning....so far....

    Monday: going to the Coldplay concert in DC so no cooking for me

    Tuesday: Chilli rubbed steak with avocado and cucumber salad/slaw/salsa

    Wednesday: something with chicken...

    Thursday: Roasted shrimp salad with cucumber and tomato salad

    Friday: maybe going out for crabs...not sure yet.

  • Monday- ham slices ( we didn't have them last week), egg noodles and broccoli

    Tuesday- spaghetti and meatballs

    Wednesday- I think we have the viewing so the family might go somewhere between the times, my mom will prob get CFA for the kids since she will be watching them

    Thursday- roast in the crockpot with potatoes and carrots

    Friday- frozen pizza

  • My meal planing has been nonexistent these last few weeks. We have a baked ziti that a coworker bought by for dinner tonight. We will probably have taco night tomorrow and then figure out what to do with the csa veggies we pick up on Wednesday. DH's family reunion is this weekend so meals will be taken care of Friday-Sunday.

  • sunday- steak, salt potatoes, squash

    monday- tacos

    tuesday- soup/grilled cheese

    wednesday- spaghetti and chicken parm

    thursday- pork chops

    friday-saturday- out to dinner

  • Last week got all off track because the storm/power outages.

    This week:

    Sunday: Pork tacos with mango, avocado and cilantro (YUM), salad, and corn on the cob
    Monday: Salsa chicken in the crockpot, steamed broccoli
    Tuesday: Beef/Chorizo meatballs over spaghetti squash, some sort of veggie
    Wednesday: Shrimp over pasta with ricotta and basil, some sort of veggie again

    Thursday-Sunday: Ocean City!
