Hi everyone. My DH had to unexpectanly have quad bypass surgery and then found out he is diabetic. I am having a hard time coming up with easy recipes that he can eat. Still waiting to take a class on diabetes that explains the labels and stuff. Does anyone do recipes like this or know of great places to go for these? TIA!

I'm sorry you both have to go through this. It's not easy at first, but you will get through it. I recommend dLife.com, and diabetes.org. You can also just do a search for diabetic or low carb/ low calorie/ low fat recipes. Also check out your library, or get ahold of some diabetic cookbooks or even a weight watchers cookbook. I have found, from much trial and error, that my DH started doing much better when I switched to whole grain and increased the amount of fresh vegetables in his diet. I use brown rice. Trader Joe's has a really good brown basmati rice and I use whole wheat pasta as much as possible and the same goes with bread. I am trying to eliminate processed foods from my cupboard because they are so bad for him and if they are around who can resist?
I also found that the nutritionists sometimes teach a patient tricks to cheat in order to eat what they want but in the long run it just causes more problems. My DH started out with type 2 and, sadly, is now on insulin shots twice a day.

My husband is diabetic and my cousin is a Nutritionist that specializes in diabetes nutrition/education. The key is to eliminate the white stuff - sugar, white bread, white pasta, white rice, etc. Use whole wheat or whole grain breads, pasta, and brown rice instead. The issue with the white breads, etc. is that they spike your blood sugar while the whole wheat/grains don't. Plus they are healthier for you. Another big change is to avoid potatoes - another major starch that can spike your blood sugar.
My husband and I have changed our diet and his diabetes is much better (not insulin resistant) and my husband has lost 50 lbs. and I've lost 53 lbs!! It's about healthy eating and a balanced diet.
