Sun- dinner out at the shore, had an allagash crabcake that was amazing!
Mon- maple glazed salmon, baked zucchini and a sweet potato

Thurs-Fri- at the shore so tentative but probably grilled dogs and burgers, and may pick up some prepared roast beef and bring it down with me

We are trying to have minimal oven/cooking time this week on account of the impending heat wave. This is a total lazy week.
Monday: Grilled chicken with couscous. Veggie TBD.
Tuesday: Sandwiches/wraps
Wednesday: more grilled chicken for me, grilled fish for DH. sides tbd.
Thursday: Leftovers or breakfast for dinner. Haven't decided yet.
Friday: either frozen pizza (we're lazy) or take out
Sunday: Picked up a pizza from Pica's...yuck, they changed their sauce.
Monday: Homemade pizza with carmelized red onions, gorgonzola, and pears (I make about 6-8 balls of pizza dough each month, and freeze it. Annie's Eats has a great recipe for pizza dough, with hints & tips).
Tuesday: Husband is supposedly making butter-poached shrimp with avacado and grilled corn.
Wednesday: Taragon chicken salad
Thursday: More Taragon chicken salad
Friday: Maybe takeout sushi
Saturday: Probably will go out to eat
Sunday - turkey burgers topped with avacado
Monday - left over turkey burgers
Um, thats how far I've gotten. Pathetic.

Sun - roasted zucchini and eggplant lasagna, green beans
Mon - grilled sirloin steak, corn, roasted potatoes and carrots
Tue - black bean and zucchini enchiladas
That's all I have so far.

LOL...when The Dude opened the D's fridge on Saturday night he was like "jesus h..whats with all the veggies...or zucchini?"

This week is a little bit wonky for us, with me having various appointments/plans during the mornings and afternoons, plus working every day 3-9:30, plus all day Saturday...and DH has work plus appointments, and leaves for another work trip Friday morning through Sunday night...but here's sorta what I've got in my head...
Monday- DH was supposed to have dinner plans with a co-worker, but they fell through...so my plan for me to just have some cereal or sandwich has now become we will all have burgers and probably baked beans or some sort of veggie. I didn't find out until an hour ago that he's home for dinner after all.
Tuesday/Wednesday/Thursday- one of these nights DH will be going out with that co-worker- not sure which night yet- but on the others, we will be having pulled chicken wraps with bacon & cheese fries...the recipe makes a LOT so that meal usually carries us through two nights, so we'll have that the other two nights.
Friday/Saturday/Sunday- just me and the kiddo. I'll probably eat at my parents' one of the nights at least, and will do some simple something or other the other nights.
Ditto - this sounds awesome and I've got some chard to use up.
Jess - in the past two weeks I think I got a total of 12 zucchini and squash combined. I feel like the Bubba Blue of zucchini.

Jen that is hilarious. You know, I've never actually tried zucchini. I keep saying I'm going to try that skinnytaste.com recipe of the meatloaf cupcakes that have grated zucchini in the "batter".
Erin do you think that sun dried tomato chicken recipe would work with greek yogurt in place of the heavy cream?
Then he scoured your garden in the back to see what you were growing and how you were going about doing it.

Sorry ladies, no recipe. I caramelize the onions with some garlic, brown the sausage, add sage and kale/chard and turn it off so the green just wilt a bit. Throw that mix on TJ's whole wheat pizza crust and add a bit of olive oil if it looks dry. Top with fontina and bake.
Jess- not sure if yogurt would work. The sauce is yummy w/o the cream so you could make it, add a bit of yogurt to a small portion of the sauce and see if it works. If it gets gross, just have it w/o the cream and add some extra parm on top.
