please share your cucumber recipes!

I'm literally up to my ears in cucumbers, they are HUGE and numerous this year....I have a basic salad recipe and of course we eat them raw as is, but does anyone have any other suggestions?

I love cucumbers in sandwiches. They pair well with hummus and/or turkey in a wrap. I also love this cucumber bite appetizer. You can make tzatziki dip too...the recipe I use is basic and in this burger post. You could also make pickles.

korean cucumber salad

sour cream cucumbers - peel and slice cucumbers into rounds. Sprinkle with salt. Add 1/2 cup sour cream for every 2-4 cucumbers. Stir, let sit in fridge for at least 3 hours before serving.

vinegar cucumbers - toss cucumbers and thinly sliced onions together with white vinegar, a tbsp. of sugar and a tsp. of salt. Refrigerate until chilled and then adjust sugar/salt as necessary.

Since they're big they won't be the best for pickles, but you could make them anyway.

I don't have recipes but cucumber chilled soup, tomato salad (red onion, cuc, tom, kalam. olives, feta, oregano, salt, pepper, olive oil, basalmic vin.), cucumber flavored water, chopped up in vietnamese sandwiches.
