Something snacky to bring to a cookout?

We're getting together with some friends on Friday night.  I think something snacky would go over well.

We hung out with them yesterday and this will be the same type thing.  SUPER casual - like sit out on your porch and watch the kids on the slip n side.  Last night I brought Texas caviar and people inhaled it.  I think it was so popular because you could walk by and grab a couple chips and didn't need a plate or silverware. 

So any ideas?  I went to the 4th with these same people and brought that pecan pie I posted and a couple people remarked last night, "So you're 2 for 2!  Pretty good cook, huh?  What else are you going to bring us?"  So, high bar to meet!  What should I bring, EI nesties?

  • Do you want something that can sit out for awhile or can it have some sort of cheese/mayo in it?  Are you opposed to another dip? 

    If you are ok with a little mayo these are a bit of a pain, but oh sooooo good.

    Cherry Tomato poppers
    1.5 (16 oz) packages bacon (cooked)
    2 pints tomatoes
    1/2 cup mayo
    1/2 cup green onion

    -Using a small knife core tomatoes and remove a little pulp.
    -Mix the bacon, mayo, and green onion and stuff into tomatoes.
    - makes 60-80 (or however many tomatoes you have)

    A greek layer dip, but rather seasonal.

  • I went to a BBQ last week, and somebody brought a tomato tart.  It was phyllo dough that has been lightly buttered and dusted with grated cheese between each layer, and then baked. She cut them in squares and stacked them with tomatoes, fresh mozzarella, basil, and some balsamic.  It was amazing, and I tracked her down for the recipe. The only thing she did different is that she didn't bake it a second time once it was assembled (which was perfect for summer).

    She baked the dough in the morning, and then assembled them right before the BBQ. I can't wait to find a reason to make them they, they were that good.

  • I've done a layered Greek dip that was a base of cream cheese mixed with greek seasonings (I do about 2 to 3 Tbsp to a block of cream cheese), topped with hummus (homemade or store bought), and chopped seeded tomatoes, seeded cumbers, kalamata olives, and crumbled feta cheese. Serve with pita chips. Really good and light, and not too heavy. 
  • BUFFALO CHICKEN DIP

     

    16 oz. cream cheese

    8 oz. Frank's Red Hot Sauce

    3/4 cup chopped celery

    2 cups cooked shredded chicken

    1 cup shredded Cheddar cheese

    12 oz. bottle ranch dressing

     

    1. Combine cream cheese, hot sauce and celery. Heat in

    microwave until cream cheese is melted. Stir; add chicken, dressing and

    cheddar cheese. Mix together.

     

    2. Put into a baking dish. Top with more

    shredded cheddar cheese, if desired. Bake at 350 degrees for 30 minutes.

     

    3.Serve with crackers, celery sticks or Tortilla chips or Fritos

  • This may be my pregnancy talking but......I made some homemade pesto the other day and we put it on some ravioli for dinner.  Since then I've been smearing it on the cold pasta and some foccacia bread for a snack.  You could add some potatoes and serve it as a little dip.  Like I said it may be the pregnancy talking, but man is it good.
