I am having a couple friends over for dinner and am making this dish from Annie Eats. Although it looks like it would be great as a main dish, I'm worried the guys would like meat as well. I even thought of serving this over fresh spinach or possibly in large ramekins. What would go well with this dish? What about some simple grilled chicken marinated in a wine vinegar/whole grain dijon mustard marinade? I used this one last week with red wine vinegar, it was easy and delicious!
