Chcolate Chip Cookies - butter or margarine?

My mom always made cookies with margarine growing up. I love, LOVE, butter so I have always used butter in all my baking. Recently I had to use margarine and thought they turned out way better lol!

What do you use?

  • I only use margarine when I am baking just because it's what my mom always did.  She said it always made her cookies turn out better and I am not one to argue.

  • I don't think margarine should even exist, ha! So for me, it's butter.

  • Always butter.

The key to great chocolate chip cookies is to soften the butter but not let it get too soft.  I put the butter on the counter for 1 hour before making cookies.   After mixing the ingredients, I put the dough in the frig for 1 hour before rolling/baking.  This allows the cookies to not spread out and become superflat.  The cookie is then chewy rather than crunchy.

4th.  I only use margarine for grilled cheese because it's more spreadable.

  • I use butter.

I make a massive batch of chocolate chip cookies and then split into smaller batches, roll them into big sausages and then wrap with plastic wrap and throw them in the freezer.

When ever I fancy cookies, I grab one out the freezer and pronto..cookes in about 10 min (after a bit of defrosting)  Don't defrost to room temp, but cool enough that they cut really nicely and all you need to do is put them on the baking tray.

Do it in the morning when getting ready...the smell of baking is amazing!!

Oh one more thing, instead of buying chocolate chips, I just buy a nice bar of chocolate and smash them up with a rolling pin and put that in.  Tends to be cheaper...well it is cheaper in the UK.

  • I wouldn't bother to even eat a cookie made with margarine.

    Why waste the calories.

    BUTTER!!!!! Big Smile

  • I always use butter because it's better for you than margarine. For best results when baking, butter and eggs should be room temperature. It has to do with the gluten and how it all binds together. Basically, it tastes better. Smile
