What is the secret to...

cooking eggs on a stainless steel pan?  We have Calphalon stainless frying pan and regardless of what we do our eggs stick every time.

Heat the pan first/don't heat the pan...no oil/some oil/...turn early, turn when fully cooked...

Who has perfected the art of frying an egg in a stainless pan?

Anyone can be cool, but awesome takes practice!

Re: What is the secret to...

  • You know, I wish I knew. We have a few calphalon pans too and now that I think about it, that's *always* the one the eggs get horribly stuck to. I have a random coated pan also and the eggs never stick to that one.

  • I usually spray with nonstick spray, then melt a T or so of butter. Then cook the eggs over low-medium heat. This usually works, but if I turn up the heat too much, they'll stick sometimes.

get the pan super hot first , turn to a medium heat  then after a min add a knob of butter, only turn once

Mom always did it that way and it seems to work 95% of the time

I don't use nonstick spray...and I thought that you were not supposed to use spray on stainless steel pans?  Thanks for the tips...I'll keep trying. Big Smile

  • What works for me is to heat the pan first, but not till it scorching hot but warm and then add the oil of choice, let that heat until it starts to glisten but not smoke and hen add your eggs. I'd say this method works  for me 90% of he time.
