The Nest has a really good crock pot gumbo recipe using bagged frozen veggies. The only thing I add to it is some precooked andoullie sausage.
I will get chicken breasts when they are on sale and throw most of them in the freezer. I take the breasts from the freezer to the crockpot all the time and it turns out wondefully. One easy recipe is to cover the chicken in italian dressing, then add some of your favorite spices (I love adding cumin, garlic, onion, and a dash of red pepper) and cook for 8 hours on low. The chicken shreds and you can serve it over quinoa, rice, in sandwiches, or taco filling. Delish!
You can also take a chuck roast, put a bag of carrots, chop up some potatoes, add a packet of dry onion soup mix, and you've got yourself a wonderful meal!
