  • I think the secret is your individual taste. I love Southern deviled eggs: with lots of mustard. My husband hates them, and prefers them very dry with a touch of mayo and a dallop of mustard; I hate those. You could always experiment and boil several eggs, and fix two at a time using different recipes to find what you like best. Chances are no matter what you decide, you will find people that both love yours and hate them.

  • My advice: taste as you go! My mom just made some for the first time the other day and just added the recommended amount of salt in the recipe even though it seemed like too much. It was definitely WAY too salty but she didn't have any more time or ingredients to really fix them.
  • I make mine with mustard, mayo, chopped pickle and hot sauce.  Salt and pepper to taste.  I sprinkle some with cayenne pepper and some with paprika (and note which are which) they are ALWAYS a huge hit and people are always surprised how easy they are.

  • Mayo, dry mustard,finely chopped onion, and

    tiny shrimp, the canned kind.

  • Taste before filling the shells.

    I don't measure, I just eyeball it, taste & adjust.

    for a dozen eggs (24 pieces)

    to the egg yolks, I start with @ 1/4 cup miracle whip (not mayo, need the "zip") -- can use reg, lite or fat free (add more as needed to get consistency you want)

    a little prepared mustard (just a squirt), a good dollop of vidalia onion relish* (a heaping tablespoon) sprinkled with a little sugar.

    Mix, taste, adjust.  Fill the shells & sprinkle with paprika

    *has to be vidalia onion relish, not pickle relish -- completely different taste. (tastes close to my grandma's homemade relish recipe).  In my stores it's not in the condiment aisle, I find it in the produce section  this is the brand I get:

  • I use this recipe when taking them to a group of people and they disappear quickly.  Everyone says how great they are.

    Personally, I think it is too bland for my tastes.  I add pickle juice and hot sauce with green olives as a garnish.

  • With so many different recipes out there - I think deviled eggs are a personal preference.  I make mine very simple, but they are very close to traditional southern deviled eggs.  They are a big hit at all of our gatherings & parties!
