Dear Community,

Our tech team has launched updates to The Nest today. As a result of these updates, members of the Nest Community will need to change their password in order to continue participating in the community. In addition, The Nest community member's avatars will be replaced with generic default avatars. If you wish to revert to your original avatar, you will need to re-upload it via The Nest.

Any one pot dinner ideas? (low carb?)

I am taking dinner to a family with a new baby tomorrow. I was going to take a  Greek Lemon Chicken dish that bakes over onions, potatoes, carrots, etc. But, in talking to the mom yesterday, she mentioned that her husband is doing a no carb diet right now. Now I'm not sure what to make! Any ideas? Or would you just make the chicken dish and let him pick around the potatoes? I'm not sure what's appropriate. THANKS!

  • If you have all the ingredients purchased, then I would make what you planned and he can pick around. If he isn't avoiding them for any dietary/allergy reason then I wouldn't worry. If you aren't prepped, it would probably be nice to bring something he can enjoy. Sorry I do not have suggestions right now, but I would Google no carb meals for ideas.
  • just let him pick around the potatoes :-) Plus, potatoes are not a processed carb so that might be OK.
  • For future reference sweet potatoes are low carb so these are a great alternative to potatoes. Or substitute something like squash - it's similar and you may find yourself not missing the potatoes :)
