    Favorite color?  Orange--I used it in my wedding!

    Favorite thing about your wedding?  I have two favourite things: how my family and friends pitched in to make everything look perfect, and how we were able to incorporate our multi-cultural backgrounds into the ceremony and reception.

    Where did you go for you HM? Would you go back?  We went to the Mayan Riviera and stayed at the Grand Sunset Princess Resort. I would go back to the Mayan Riviera, but I wouldn't do an all-inclusive again. I would rather do a diving vacation and stay at a beach-front hotel with a high-quality dive shop.

    What is your favorite food?  Oh man...this is a tough one! I love lots of different foods! When I was a kid, I always said cucumbers, followed closely by chocolate and lasagna. I'm a big fan of ethnic foods--Indian, Thai, and Mexican, and also some of the West African foods I grew up with.

    Your least favorite food? 

     Seafood. I didn't like it even before I went vegetarian.

    I am a swim coach/lifeguard/swim instructor/grad student. I think I would like to be a professor.

    In the summer, I hardly swim at all, but from September through June, I swim 4-5 times per week. 

    Best tip for staying burn-free out in the sun?

    Well, being Canadian, the majority of my swimming is indoors! When I am outside in the sun, I make sure I put sunscreen on my face, at least, but I'm not into hats or covering up too much.

    How did you meet your H?

    We met working as part-time lifeguards and swim instructors at a private club and bonded over late-night tennis matches. We'd sneak onto the courts at night after closing shifts at the pool. 

    Favorite date night activity?

    We both loooove food, so we like to try out different restaurants or make new recipes at home. We also like tennis! 

    Biggest H pet peeve?

     I hate it when H leaves his dirty dishes in the guest room (where his computer is set-up). He's gotten way better about not leaving whiskers and coffee grounds in the sink, though. :) 

    What was the biggest deciding factor in your going vegetarian? 

    It was sort of a spiritual/ethical/environmental thing for me. I spent a couple of years teaching in the Philippines, and while I was there, I got into scuba diving and spent a lot more time being in nature. I was really struck by God's creation and I feel really compelled to take care of what he's given us. The livestock industry has a really negative impact on the environment, and I'm also concerned about the treatment of animals during and prior to the slaughtering process. I applaud those who choose more free-range, grass-fed meat products, but I figure if I can go without it completely, I will!

     My dad is Swedish-American, my mom is Mennonite-Canadian, and they met and got engaged in Nigeria, West Africa. I grew up in the neighbouring country of Niger. H has an even more interesting background--his mom is from Venezuela, his dad is from Nepal, and they met at a university in Russia! H grew up in Venezuela and came to Canada with his parents about 7 years ago.

    Can you describe your favorite West Africian dish? I love ethnic food but have yet to try that particular kind.

    My favourite West African dish is "shinkafa da wake" (beans and rice). It's basically white rice cooked together with black-eyed peas (it all turns grey), topped with onions fried in peanut oil. The trick is to fry the onions for a really long time at a low heat until they are all golden brown and crispy. So delicious! Oh, and you have to add a touch of spice--some hot red pepper!

    How did your H propose?

    H and I had both been up in my home town (5 hours away), visiting my family for a week. He took the bus back early, on Wednesday night, because on Friday he had a tour for an accounting company that he wants to work for when he graduates. I drove down on Friday and arrived at his house around 9pm. He let me in the back door and I stood inside the kitchen, which was spotlessly clean. He was dressed up, but I was expecting that, because he had been visiting that company. He had me wait in the kitchen for a few minutes, and then brought a blindfold for me to wear. 

    He led me into the living room, and when I removed the blindfold, I saw a table with a bottle of wine and two glasses, and a wooden platter covered in tiger lilies (which I have been obsessing about for the last few months!) Under the flowers, there was a ring box. He told me to open it, so I did, but it was empty! Then I turned around, and he was down on one knee holding a vegan chocolate cake that he'd made himself. With icing, he'd written "Marry me?" with two boxes underneath labeled "yes" and "yes" (I really couldn't say no!) I said "yes," then he put the ring on my finger and led me into the kitchen to "make things official." He gave me a little ziplock bag with red frosting in it to squeeze check marks into the "yes" boxes on the cake!

    If you become a professor, what will you teach? What area is your graduate degree in?

    I'm studying physical education. If I were a professor, I would probably teach classes relating to pyscho-social determinants of health-promoting behaviours and I'm also interested in the role of sport in getting kids active and promoting life-long health and activity. 

    What does your H do? What is his dream job?

    H is just a couple courses short of a BA in Business, with a concentration in accounting. Right now, he's looking for anything related to business and accounting, but eventually, he would love to run a restaurant. His real passion is cooking, not numbers! 

    Do you and your H plan to have chilldren in the future? If so, how many? Names picked out?

    H and I would like to adopt 3-5 kids in the future. We have two names picked out so far: for a girl, Adriana Maria, and for a boy, Avery William.
