Enchiladas - assemble and deliver without baking?

Dumb question, I'm sorry...

I want to make enchiladas, or an enchilada casserole on Thursday afternoon to deliver for dinners to three new mom friends.  Two will go out that afternoon/evening after I assemble, and one will be delivered the next day.

Should I assemble them, and then just write the baking instructions on the outside?  Or is it better to bake them a bit/heat through myself, then deliver with instructions for re-heating?

  • Assemble and write the directions on the outside (if I am using a disposable tin I simply write them with marker on the lid) This way, they can bake them or freeze them to eat at a later date.
  • meh-i'd be afraid the tortillas would go soft very quickly and get gross. if you dont know fi they'll cook them immediately i'd freeze them and deliver them frozen.

    I'm delivering them with the idea they're dinner that night (and I believe that's what my friends are thinking too).
