What's for dinner this week?
I honestly have no idea yet. We just got home from vacation this evening and my husband is having his wisdom teeth out on Monday, so I have to think of soft foods to make for him.
What's on your menu? Any suggestions for soft foods for my hubby? I've already got scrambled eggs, oatmeal, pudding, and protein shakes in mind for him.

Here's my menu for the week:
Saturday-DH is making me chicken soup
Sunday-Quinoa and Kale Lasagna with salad (my brother's recipe)
Monday-Crispy Tofu with Garlic and broccoli with rice and eggroll
Tuesday-Pierogi and Kielbasa Bake with salad
Wednesday-Empanadas with rice
Thursday- Crock-pot Chicken with potatoes and vegetables in onion mushroom broth
Friday-Homemade Tuna Helper with salads
Good luck to the hubs with the wisdom teeth. I was surprised that I didn't need soft foods for more than a couple days. I think eggs and soups are a great idea because they'll fill him up.
This week, we're having:
Sun: Spanakopita
Mon: Black Bean Tacos
Tues: Shaved Asparagus Pizza
Wed:I'm at a work meeting, DH leftovers
Thurs: Smoked Sausage Supper
These are my meals, not sure what days we'll be having them. Kind of depends one when I get to the grocery store.
Chicken with tarragon and leeks (slow cooker)
Spaghetti and Meatballs (meatballs have already been made and frozen)
Pork Chops with apples and polenta
Creamy rice with roasted shrimp (almost like a midwestern shrimp and grits...I am not a huge grits fan to be honest)
Leftover braised beef and homemade egg noodles (probably for tonight)
We'll probably eat out on Friday and throw one of my already prepped and frozen meals in the crockpot on Saturday.

The pierogi and kielbasa bake is a favorite of ours. I usually just use the potato and cheese pierogies. They are really good.
Sure here is the Quinoa and Kale Lasagna recipe-I haven't blogged it yet but it was really good!
Quinoa, Spinach, and Kale Lasagna (adapted from my brother's recipe)
1 c. quinoa, uncooked
2 c. vegetable broth
1/2 onion, diced
2 c. marinara sauce
2 c. kale, cleaned and destemmed
2 c. spinach, cleaned and destemmed
3/4 c. mozzarella cheese, shredded
1/2 c. Parmesan cheese, grated
1 c. part skim ricotta cheese
2 T. low fat sour cream
1 T. olive oil
1 t. rosemary
1 t. cayenne pepper
1 t. black pepper
1/2 t. salt
1 t. parsley
1 t. oregano
1. Cook the quinoa in the vegetable broth per the instruction on the box.
2. While the quinoa is cooking, heat the olive oil in a large skillet over medium high heat. Add in the garlic and onion and saute for 3-4 minutes.
3. Add the kale and spinach to the onion and garlic and cook until just wilted. Sprinkle with rosemary, cayenne, pepper, and salt. Mix well and remove from heat.
4. Preheat the oven to 375 degrees. Spray an 8 x 8 baking dish with cooking spray.
5. In a small mixing bowl combine 1/2 cup mozzarella cheese, 1/4 cup Parmesan cheese, the ricotta cheese, and the sour cream. Mix in the parsley and oregano.
6. Place half of the quinoa in the bottom of the baking dish. Pat it down to flatten it. Layer half the spinach and kale mixture evenly on top of the quinoa. The layer half the sauce and finally half of the cheese mixture.
7. Repeat the layers of quinoa, spinach, sauce, and cheese. Sprinkle remaining mozzarella and Parmesan cheese on top.
8. Bake for 30 minutes or until the cheese is melted and beginning to brown. Remove from the oven and allow to cool for 5 minutes before cutting.
My DH got his pulled about a month ago. During that time he lived off of eggs, yogurt, shakes, and Olive Garden's chicken and gnocci soup. I learned how to make it myself and it's super easy. Just google a copy-cat recipe for it. Stay away from rice and make sure he doesn't drink from a straw!!
I only have dinners planned through Thursday- DH and I just got back from vacation so our pantry is limited until payday:
Tonight: Broiled tilapia, white rice, brocolli
Tuesday: OG copy cat Chicken & Gnocchi soup w/ garlic bread
Wednesday: DH is making us some burgers and fries
Thursday- Spaghetti and meatballs w/ salad
That's funny you mention that soup. I literally just pinned a copycat recipe of it to Pinterest on Saturday!
I hope you like it and H can eat it! I was literally on first-name basis with the people at Olive Garden because it's all DH wanted to eat! So I decided to learn to make it. Now we have it a few times a month- it's so good!! BTW, the recipe I found for it made it thinner than at OG, so I use less chicken broth than it says to, and that made it pretty much perfect.
