Re: Menu Monday!
I have no idea what is on the menu this week. I have to do the marketing today.
But my favorite go to cookbooks are
1. The Fannie Farmer cookbook- this was my Gram's that I got when she passed away. It was published in 1938 and has all her notes written in the margins. I've made some adjustments through the years, such as removing lard and adding other more healthy fats, so it's her handwriting and mine.
2. I also have a copy of the New Moosewood cookbook that has some great side dish and dessert recipes.
Last night I tried a new WW recipe from an old WW cookbook. It was a whole chicken (about 4lbs) rubbed with paprika, oregano, brown sugar, red wine, and garlic. Then I stuffed a quartered onion inside the chicken. It took about 2 hours to make, but it was delicious. Plus I have extra chicken for lunch or tacos this week!
I asked H (who's not into mexican food at all, he can't do the spicey stuff) if he would eat tacos if I made them and controlled the amount of spicey-ness and he said YES! So I'm going to make tacos with some whole grain shells and lean ground beef (and shredded chicken from last night's meal) this week.
I love The Pioneer Woman's website. She makes some unhealthy recipes, but I find that I can adjust them a little to make them healthier. Pinterest is AMAZING for food too (as I'm sure you all know) so I go there a lot for ideas.
I don't have a favorite cookbook. I feel like so many are just too complicated or too many random ingredients that I'd never keep on hand....so I'm looking for some good ideas for new books!

I made this chicken noodle soup for dinner yesterday:
http://www.countryliving.com/recipefinder/homemade-chicken-noodle-soup-3996
I omitted the bay leaves, used dry spices and added way more garlic. I also used a lot more chicken broth and definitely would add more next time because it did not have enough broth.
It was very very tasty.
Favorite Cookbooks: Pinterest, of course and Taste of Home's annual Healthy Cooking cookbooks--I collect them and work my way through them. They are awesome! My grandmother in law likes to get them for me for Christmas.I also love my fix it and forget cookbook...for those nights...
I have an entire shelf of cookbooks and they are one of my treasures
This week:
Monday: Shepherd's Pie
Tuesday: From scratch Chicken Pot Pie
Wed: leftovers
Thurs: Pasta--Veggie Rigatoni
Fri: Chicken Piccata with mashed potatoes and roasted onions
Sat: Greek Pita Pizza
Sun: We're going to a fair--so we decided to just junk out there
Cookbooks: Mark Bittman's How to Cook Everything is AMAZING. It is full of basic recipes that are easy to dress up. Everything I've tried out of it has been perfect. It is like my kitchen bible.
For not so basic things, I get the Rachael Ray and Food Network magazines, and they always have a TON of great ideas.
This week we're having:
Chili
Finishing up some vegetable soup I made this weekend- Seriously the best. I generally don't like veggie soup, and LOVE this one: http://pinterest.com/pin/245375879667213773/
French toast
Mac & cheese with a ton of veggies in it
Saganaki, fava bean salad, & pickled beets (it will make my Greek H swoon)
I'm making this either tonight or tomorrow for dinner!

We'll be having leftover Chinese food tonight. Tomorrow is Taco Tuesday!
Favorite site for recipes (besides Pinterest) is definitely skinnytaste.com
You read my mind! This is exactly what I was thinking we should do today!!!
Over the weekend I made: Saturday: mini pizzas w/ oven roasted tomatoes, fresh mozzarella, prosciutto and balsamic dressed arugula on homemade dough; chirozo, sweet potato and black bean enchiladas. Sunday: Pesto-mozzarella grilled cheese; Short-ribs with mashed potatoes, roasted green beans and homemade bread. All that and I have no leftovers for lunch today!
This week I'm making: ground beef tacos with black beans and seasoning from Pinterest, fresh pico de gallo and avacado; whole chicken in the crock pot with leftover mashed potatoes and a veggie (whatever's in the freezer); chicken pot pie; kale and chorizo strata; and a new healthy alfredo recipe from Pinterest with whole wheat pasta and shrimp.
These are my favorite websites for new recipes: http://pinterest.com/bpphoto785/yumm-websites/ I don't use a lot of cookbooks anymore. I find most of my recipes online, especially on Pinterest! Or I just Google what I want to make and combine several recipes, those are my favorite!
I agree that I HATE any recipe with ingredients I'll never use again!
I get so excited for fall, because I love the fall foods. We make a huge pot of chili almost every weekend...
Pumpkin breads, Apple goodies..
yum!

This week:
Monday: Leftovers (I made taco soup last night H's favorite)
Tuesday: Baked chicken with mashed potatoes and veggies
Wednesday: Alfredo Pasta with garlic bread
Thursday: Chicken and rice with asparagus
Friday: date night!
Mostly I use Pinterest for new things. I do however have several cookbooks at home. One was a homemade cookbook that H got from a customer they did some work for. The other I have no idea what it's called but it's is supposed to be like an engagement cookbook type thing. But like I said mostly Pinterest!
I typically use Pinterest to find recipes but I also got a Betty Crocker cookbook as a wedding present and I am excited to try some recipes from there.
Yesterday I made chicken chili for dinner and it was pretty good! I don't typically menu plan so I have no idea what will be for dinner tonight.
