Hey ladies! Any of you a canning expert? I'm very new in canning and have recently become addicted.
I got 3 HUGE zucchini's from my friends garden, I cubed up one and put it with our remaining tomatoes (which I stewed). I cooked that up together and am canning it. My moderate go-to canner said she wasn't sure about the zucchini, but since it was with tomatoes it will probably be fine.
The thing is, that only took 1 zucchini. I still have 2 others. I would like to cube the zucchini and can only that. Has anyone ever done this before? Any suggestions?
