  • Living in the Southeast, we are getting more than our share of rain and early fall weather so next up is a big pot of chili. We try to eat fish at least a couple of times a week so salmon or tuna and steamed vegetables will appear as well as Taco Thursday!
  • Chili made with onions, garlic, and jalapeno's from garden, apple cake from supply of apples, beef enchilada's, sub sandwiches and what ever inspires me that I have on hand. 
  • Honey Garlic chicken, Sweet and Sour Pork chops, Crispy Cheddar Chiken. 
  • Normally, I love to cook..but htis week I'm on vacation in South Carolina & I will be doing alot of dining out lol

     

    I miss CA already, but have enjoyed the rain today! Thanks for the chance at the great giveaway! Love your site!

  • Tonight it's flat iron steaks and zucchini....tomorrow lasagne and salad  :) Probably take-out on Thursday  lol
  • This week I am trying to use some of the food we already have.  Last night it was tuna and noodles.  Tonight is chicken strips and acorn squash.  Tomorrow night we are going out to eat; Thursday is pork chops and veggies.  Friday will be chicken something.

  • This week I am making a yummy chicken pot pie, steak fajitas, and a creamy pasta with broccoli and sun dried tomatoes! :) We just got married last year and didn't register, so we could definitely use some new kitchenware. :)

  • Menu for tonight: breaded chicken breasts, kale cooked with garlic and coconut oil and basmati rice medley :) 
  • Lots of Veggies! I have a wedding to go to this weekend and need to stay away from all the good leftovers I have in my refrigerator. 

    Monday - steamed veggies

    Tuesday - Dinner at the IL's

    Wednesday - sweet potato

    Thursday - roasted butternut squash

    Friday - out of town!

  • pork chops for a couple of nights, then spaghetti, then a couple of chicken dishes for a few nights
  • Tonight: Cheese tortellini with pumpkin alfredo sauce!

    Tomorrow: pork chops with peaches and bourbon balsamic glaze

    Thursday: Hmmm....idk yet!  

    Friday...will probably grab something fast before my 5k! :-)

  • With the construction going on in our new condo, unfortunately there will be a lot of take out on the menu!  Those pizza cutters sure would come in handy!
  • Today: Bang Bang Tofu and Shrimp (copycat Cheesecake recipe!)

    Tuesday: I'm going to try Vietnamese Caramelized Chicken (I've failed twice with the caramelized sauce!)

    Organic whole chicken, grass fed flank steak, stew!

  • Breaded swai, mac & cheese, pasta & meat sauce, veggie

    lasagne, red beans & rice, & lentil soup w/  homemade bread.

  • Our favorite meal is a Campbell's recipe.  It is called Taco Bake.  We make it with Tomato Soup or a type of spaghetti sauce It's a simple recipe.  It requires tortilla shells, shredded cheese, milk and ground beef (the meat can be substituted). You brown the beef, drain.  Add tortilla shells cut into 1" pieces, shredded cheese, and milk.  Blend.  Once all blended, place in baking pan.  Add shredded cheese on top and bake at 375 degrees until cheese is golden brown.  I usually serve this about twice w month.  Well, this, and homemade lasagna.
  • Scalloped potatoes with turkey ham, Grilled chicken breast, turkey loin on the grill, and then salads with the leftover meat...yum!
  • Just bought a new dutch oven, so I'll be making a pot roast to break it in!
  • There was some chicken and rice, breakfast for dinner or brinner as we like to call it ;) and homemade chicken lo mein

  • Wednesday was Kale, Mac, & Parm - which will appear on my food blog this coming Monday: http://amandasapron.com  Thursday was Steak Salad & Sweet Potato Risotto. Tonight is game night so we'll have hummus, pita, and other snacks that friends will bring. Tomorrow will probably be quesadillas!
