Meatless meals your H will actually eat
Hey all! We are looking to take meat out of our menu a little bit. It's expensive and we are also trying to be a little more healthy. The problem is that DH is a carnivore!!
What are some hubby-approved meatless recipes you have? TIA.

My husband and I love quinoa. It's like rice, but much healthier and has protein in it, so it's good for nights you want to go meatless.
Last night I made swiss chard saute'd with mushrooms, and scallions. Then I added it to the quinoa with some salt, pepper, red pepper flakes, olive oil, and shaved parmesean cheese. My husband looooved it and had 2nds! No meat!
I agree with using quinoa. Here's a couple of our favorites:
Mexican Quinoa-Stuffed Peppers
Quinoa "Burgers"
Also we like using eggs for protein as well- quiches, breakfast casseroles.

Spinach & Cheese Quiche
Breakfast Taquitos
Black Bean Burgers

Spinach Lasagna Rolls
Baked Penne with Roasted Vegetables
Greek Pita Pizzas
Different types of risotto. I have also made risotto with quinoa instead of rice.

Veggie lasagna
black bean and veggie quesadillas
