favorite meal to have with hosting weekend guest?

What is your favorite dinner to serve when you have weekend guest? I don't want to be preparing something the day our guest are here...I'm thinking something I can prepare ahead of time and heat up.

  • This time of year I have a few depending on the crowd.  I've pots of veg soup or chili with good bread.  If I want something a little nicer I'll do a cherried pork roast in the crock pot then just make some noodles.  If I'm willing to put in a touch of work in the morning I'll do a spinach stuffed chicken breast with acorn squash.It's a morning prep but no work once it's in the oven.  If you want something the night befpre baked pasta is an easy one
  • I agree with chili or something I can have going in the Crockpot to eliminate having to cook and run around while guests are here. Another thing I sometimes like to do is make a few homemade pizzas (well I buy the crust, but do the sauce and toppings on my own). It takes a little prep time, but sometimes my guests volunteer to chip in and put their own toppings on, etc. It's relatively quick and easy.

  • Another vote for chilli - I had friends in town from overseas and made a huge pot of veggie chilli for them; it was a big hit (although I didn't have the foresight to make it beforehand.)  My husband has done homemade pizzas for dinner guests (not staying over), which is fun because you can customize a few and try them all.
