Plan my dinner.

I am making shrimp risotto for dinner... but idk what else to put in it.  Lemon?  Maybe some basil or thyme?  What say you?

  • I would prob cook the risoto in veg. broth instead of water
  • Oh no risotto is cooked in white wine and (gluten free) chicken stock.
  • I don't like shrimp and I don't really know what risotto is so I am no help.  Sorry!

  • oh my goodness!  Risotto is a delicious dish that is made with Arborio rice, white wine, chicken stock, an onion (but I use a shallot and some garlic instead), butter, and Parmesan cheese.  

    You put in some EVOO and the onion/shallot.  Then you put in the rice and you toast it for a few minutes.  Then, you add dry white wine and cook the rice in the wine until it absorbs the liquid, then you add in the chicken stock a few ladles at a time until it absorbs everything, then you add butter and Parmesan and stir the crap out of it really really fast until it becomes creamy and delicious.  I've gotten really good at it.

  • I have a really good basic recipe I can type up for you.  You can pretty much add anything to risotto. 

    Tonight I will add a little lemon, some lemon zest, some herbs, and the shrimp.  Last time I made risotto I did lemon pepper chicken.  But Gene said he wants me to make it "the exact same as last time, but with shrimp instead of chicken."
