Paleo Diet Ideas

Anyone doing the Paleo diet or something similar whereby carbs, diary, and sugar are limited/excluded? DH started the Paleo diet recently and has actually been doing really well, but we're both stuck on ideas for food to add some variety to his diet. It doesnt help that he's allergic to several fruits and nuts and doesnt have a fridge to use at work for lunches.

He pretty much exists on bacon, egg whites, vegetables, select nuts/nut butters, and an occasional berry.  Its so frustrating to cook for him and pack his lunch, but I want to be supportive because its working for him and his self esteem too.

    Hes allergic to macadamia nuts and mildly allergic to some other nuts like almonds (he can eat almonds in things, almond butter etc but not straight almonds). He is also allergic to most tree fruits like apples, peaches, pears etc Hes okay with bananas, citrus, melons, berries etc though.

    Hes trying to restrict carrots and potatoes and other sugary /carby vegetables but he'll deal with them in small quantities if necessary.

  • You can make chicken or beef soup, no barley or noodles, this way you can add some spinach, kale or swiss chard.  

    When I needed to I would cheat a little and used low carb wraps from trader Joes, Obviously it's not totally Paleo, but I'm busy and I have a toddler and I couldn't do it all the time. But I also ate a lot of salads.

  • I was hoping soup season would be my saving grace! He cant take it to work very easily without a fridge--unless I find a thermos I guess--but it will at least make dinner at home easier.

    Low carb wraps is good. We've been attempting lettuce wraps but they break easily and are super messy!

  • Chili is another idea. My friends that live this way are able to keep cool and reheat meals at work, so not having a fridge is a challenge.

  • Could you pack stuff in a thermos of some sort, and then have him heat it in something like this:

    i love that your link is to the PINK one (I know its just coincidental).....Id like to buy him the pink one just to see the look on his face. He is already totally emasculated by (nearly) 3 ladies in the house including glitter and princess dresses and all kinds of pink tupperware with daycare labels on them that I send his lunch in so this would be tops.  ;)

  • I just have to say that there's no way I'd be able to follow this diet at 39.9 weeks pregnant (or attempt to cook for someone who is following it). Hehe...

    hahah. I think Im testing his will power because Im eating ice cream and halloween candy while he's grimacing and gnawing on dried mangos.  I will definitely be more closely aligned with his diet post baby birthing (although not fully) but for now Im enjoying my last week of eating candy without guilt.
