Celebrate the Ironman with a hawaiian breakfast

One of my coworks is doing the Ironman in Hawaii next week. So to celebrate and cheer him on our team decided to make a Hawaiian themed breakfast/desserts. Any ideas? I know someone is making something with coconut. I was thinking something with pineapple or guava. Any help is welcomed.

  • When we honeymooned in Hawaii, our hotel had a breakfast buffet every morning.  Two atypical things that we loved were POG and Lomi-Lomi.   POG is passionfruit - orange - guava juice.  Sometimes I can find the individual juices at my local grocery store (sometimes I cannot).   When I can, I will mix my own POG juice.    Lomi-Lomi is a salad of smoked salmon, chopped tomatoes and chopped sweet onions.  
  • Fried Spam and Rice.

    Spam Musubi-Basically like a sushi but it is a rectangle of rice with a slice of Spam on top (the Spam could have been cooked in a Teriyaki sauce) wrapped with seaweed.

    Bread Pudding with Haupia sauce.

    You could make a guava or lilikoi (passion fruit) cheesecake.

    Macadamia Nut Pie
