Re: Mounds cake?
I found this recipe 8 years ago and, sadly, have not made it in years. I just kind of forgot about it. It was always consumed in its entirety when I took it to a party, potluck, etc. It would be incredibly easy to adapt it to a scratch cake and you could just leave out the almonds to make it a "mounds" cake.
Almond Joy Cake:
1 chocolate cake mix
12 oz chocolate chips
13 oz evaporated milk
14 oz coconut
2 1/2 c. sugar
1 stick margarine
24 large marshmallows
3 to 6 oz sliced Almonds
First layer: Mix cake as directed on box. **Bake in two 9x13 inch pans.
Second layer:
1 c. of the evaporated milk
1 c. sugar
Bring to a boil. Add marshmallows; stir until melted. Add coconut. Pour on hot cakes.
Third layer:
1/2 c. of the evaporated milk
1 1/2 c. sugar
Bring to a boil; add margarine and chocolate chips. Stir until melted. Add almonds; pour over cake. Chill 2 hours before serving.
This makes 2 big cakes and it's even better after it has been frozen!
(**You can use round pans and layer this cake. I made this for a Grooms Cake last weekend and it turned out well. Before I added the third layer (chocolate/almonds), I frosted the entire cake with ready-made chocolate frosting, and then just drizzled on the third layer. )
