Tonight my husband made us veggie quesadillas.

DH and I are both standing up in our friends wedding this week so we only have to plan for 3 dinners:
orange chicken and brown rice
mini BBQ meatloafs
BLT lettuce Wraps
? Saturday ?Dinner: Fish Tacos, Cabbage Slaw, Mexican Sour Cream Rice, Salsa, Black Beans, & Margaritas
? Sunday ? Breakfast: Sausage, Mushroom, & Green Chile Breakfast Casserole / Dinner: Roast Beef over Egg Noodles with Thyme Roasted Carrots and Multigrain Bread
? Monday ? Dinner: Mexican Shrimp Cakes with Cabbage Slaw, and Mexican Sour Cream Rice
? Tuesday ? Dinner: Shredded Beef Sandwiches with Sweet Potato Fries
? Wednesday ? Dinner: Steakhouse Baked Potatoes
? Thursday ? Dinner: Maple ? Dijon Chicken Thighs , Herbed Couscous, and Steamed Broccoli
? Friday ? Dinner: 3rd Annual Jack-o-Lantern Jaunt & Dinner at Fork in the Road with the Rennos
Monday- Beef and vegetable stew in the crock pot.
The rest of the week's dinners are up in the air. I need to shop in my kitchen and basement freezer to see exactly what we have. I do have some ideas though.
Tuesday- Curried Chicken, probably also in Crock Pot with couscous and carrots, perhaps.
Wednesday- Something with Ground Sirloin. Does anyone have suggestions?
Thursday- I think I'll make some sort of lasagna!
Friday- I don't know
Saturday- Take out or pizza delivery? I'm going to be at a dinner party so my daughter and her dad are on their own!
Sunday- I don't know
Last night we had lasagna roll ups with a salad and garlic toast.
M- "drunk" pork chops, mashed potatoes, asparagus, and corn bread.
T- Sloppy joes w/ fries
W- White bean soup w/ chorizo and kale
R- Tacos
F- DH will be out of town, so me and my bestie are going out
S- Slow cooker beef w/ broccoli over white rice
Rachael Ray has a recipe for Cowboy Spaghetti. It uses ground sirloin instead of ground beef, and has bacon in it too. My hubby really likes it. The recipe should be on foodnetwork.com. Or you could make burgers with the ground sirloin, we do that sometimes, too. HTH!
this past weekend my SIL had a going away party for her nephew so we have so many leftovers that I'm not going to have to do a ton of cooking, which I like every once in a while!

Tuesday ? Dinner at the farm, I?m making chicken pot pie!
Wednesday ? pork cutlets, with sweet potatoes and a salad
Thursday ? leftovers ? DH is out of town
Friday ? out for sushi
Saturday ? out of the house at a birthday party!

Baked Cheeseburger Eggrolls
I made these tonight and cooked them for 15-18 minutes at 400 degrees instead. Mine made 8 rolls (mine were fuller than that recipe).
These were really good!
I'm enjoying posting in this section because it's making me starting planning my meals in advance which is usually my biggest challenge!

They were great! Only thing is... all my sesame seeds fell off after I baked them! So if you find a way to make them stick, let me know!
