Help with birthday party menu please!

My LOs first birthday is coming up and we are doing a Build-Your-Own-Mexican menu.  Here is what I am planning on:

Mexican Pulled Pork

Seasoned Ground Beef

Soft Shells

Hard Shells

Toppings: tomatoes, lettuce, red onion, black olives, jalapenos, cheese, sour cream, avocado,  pico, guacamole

Sides: 

Chips and Salsa

Charred Corn Salad 

 Mexican Rice (need a good recipe for this one ladies!)

I am debating whether or not to do a Cilantro-Lime Rice and Black Beans so that people can build rice bowls if they'ld like.  Is it redundant to do a Mexican Rice and a Cilantro-Lime Rice?

Suggestions for menu additions/subtractions?

    Yes, do one or the other on the rice. Either way, we needs some beans in here for peeps that like beans and vegetarians alike.

  • I personally would stick with one rice option just to save your self some trouble! I love cilantro lime rice!

  • just one rice...and I think Cilantro lime rice can be it instead of finding a recipe for mexican rice...add black beans or refried beans...and you could do just gauc or avocado.

    The great thing is people can make themselves some taco, and have chips/salsa, beans, rice, corn as side dishes...or put this stuff on tacos, or make loaded nachos, or make it salady...the options are endless

     That was what I was thinking.  Just provide lots of options and people can make whatever they want to.  I even have an quesadilla maker I can break out if someone wants to make themselves a quesadilla.

  • i would also add some grilled veggies like red and green and yellow peppers, zucchini, onions etc...so that people can keep their tacos on the lighter side if they want.
