Thanksgiving Help!!

My uncle was in an accident and paralyzed this past June. He is still in rehab so my family wants to be with him on Thanksgiving instead of doing our normal tradition of a big dinner at grandma's. The issue is they think we should order takeout from Bob Evans. I think that is a horrible idea. Who wants pre frozen takeout on biggest food holiday?? I am willing to do all the cooking and transporting. I need some help coming up with ideas on recipes I can cook at my house and get to the clinic about 40 min away and still have food be warm and in one piece. Thanks for all help.

I will be cooking for about 18 people.

Re: Thanksgiving Help!!

  • Unless you have a kitchen on wheels, food won't stay warm for 40 minutes.

HOWEVER a number of Thanksgiving classics reheat beautiful.

Mashed potatoes, Mashed Sweet Potatoes,  Dressing (add more broth before reheating to prevent dry out), string bean casseroles all reheat beautiful.  Most pies can be rewarmed in a 200 degree oven for 30 minutes.    I always think Thanksgiving tastes even better the next day.  You can also add in dishes designed to be cold...This salad is becoming a new tradition at our house   http://www.epicurious.com/recipes/food/views/Spinach-Salad-with-Bosc-Pears-Cranberries-Red-Onion-and-Toasted-Hazelnuts-355430  We also serve a number of quick breads cold like apple, zucchini and pumpkin.   My families divides up the meal with different people bringing different dishes.   I live an hour away and have brought all of these at some point or another.

  • Maybe you could do crockpot dishes.

Easy to transport and can be warmed up there.

Cut up turkey in gravy- that type of thing. Also,

homemade dressing does well being cooked in a crockpot.

You have checked with the facility haven't you?

Make sure what you can, and cannot bring.

  • Ditto the crockpot idea!  I have a huge Christmas each year and my oven is taken up with a ham and other items.  I do a very large turkey breast in my crockpot every year...this may be a possibility for you!
