Canning salsa

I have a homemade recipe for salsa that the whole family loves.  I would love to can my salsa to give as gifts for the holidays.  Is there a way I can adapt my personal recipe in order for it to be canned properly versus using someone else's recipe?  Is there some sort of ratio of vinegar I should use?

Re: Canning salsa

  • Salsa recipes that can be canned are fairly specific with the ratios.  You may want to check out some of Ball's salsa recipes and see if yours are similar.  Many add lemon juice to the jars before adding the salsa.
