I work until 9pm a couple nights a week and we're getting sick of the same old pizza or sandwiches on these nights (my boyfriend is a horrible cook!). So I'm looking for some easy recipes that I can prepare ahead of time that he just has to put in the oven so it's ready by the time I get home. Anyone have any good ones or suggestions of where to look?

baked ziti is really easy ( i feel silly since i just wrote about it in the post below) but you could prepare that all ahead and all he has to do is put it in the oven to bake.
Crockpot meals are great! I have a shredded chicken taco recipe that is super easy. you can eat over rice or serve just like tacos. you can set it before you leave for work or cook ahead of time and then reheat.
Shredded chicken tacos
1 pkg chicken breasts boneless
1 pkg taco seasoning
1 can corn undrained
1 can diced tomatoes undrained
1 can black beans undrained
Mix all ingredients including the juices in the crockpot. Cook on low 8-9 hours or high 4-6 hours
I agree with the recommenddation to use your crockpot. I often will make big batches of chili, stews, etc. This serves well as a meal that night and can be frozen for dinners other nights.
Another thing you may want to consider is fish. I buy boxes of frozen fish, take them out of the freezer in the morning and thaw them in the fridge during the day. I then sprinkle olive oil on top and some fish seasoning and pop it in the oven for 15-20 minutes. I'm not sure if you're looking for something quicker than this but I find if I preheat the oven as soon as I get in the door it gives me enough time to change after work, set the table and get a salad/rice/etc thrown together and it's a healthier meal than a lot of my other quick meals.
