I'm trying to make Cassava Cake for my SILs birthday - its her hometown favorite and I've never made it before; only eaten it once. Every recipe I find says I should use "cheese" on the top, but no recipe says what KIND of cheese! (Actually one said cheddar cheese, but I'm pretty sure thats not what SIL uses, as the top of hers was creamy and yellow, with toasty broiled bits, but no orange...)
Long story short, can anyone tell me what kind of cheese I should use? She's from Manila if that helps with regional recipe...
