crock pot help

I feel like my slow cooker recipes that call for meat and veggies always turn out poorly.... the meat cooks through just fine, but I'm usually disappointed with the vegetables. They all get so mushy and the carrots/onions/peppers/etc all have the same taste.  Am I doing something wrong?

Re: crock pot help

  • no. it generally takes less time to cook veggies than meat though so you can add them later, use smaller pieces of meat etcc...or you could pre-cook the meat somewhat to lessen the time for it to cook in the slow cooker, cut the meat into smaller pieces, cut the veggies into larger pieces etc..

  • Some recipes I've seen have you place the vegetables on top of the meat so they don't cook as quickly. I'd also leave the veg in big pieces.
  • yeah I don't make many crock pot recipes that include veggies for this exact reason.
