Need Christmas dessert ideas!

I need a good Christmas dessert recipe. On Xmas day we're having glazed ham, homemade potato salad, this Brazilian rice dish w/ veggies, pineapple & rolls. Easy menu. I need a dessert I can make a day ahead & that's not too complicated... Any ideas?? thx!

  • There's actually a great dessert in the Nest magazine (link upper right) that I decided to make. It's a Bombe by Jamie Oliver. I'm making substitutions on it because the recipe calls for dried fruits in the ice cream.

    A Bombe is essentially an ice cream dessert formed in a bowl, with cake all around, then filled with ice cream, then a layer of cake on the bottom, with a plate put on top to push down the filling. I'm making a chocolate cake, the ice cream will be chocolate, and cutting up Junior Mints for inside the ice cream because mint-chocolate chip is a wildly popular choice in my household.

    I'm then going to melt the chocolate as the recipe calls for, and cover the cake portion on top with it.

    I cook extensively, am making a massively involved meal for our holiday dinner, and this is something I can do ahead and freeze. I'm actually thinking of doing the chocolate melting cover a day ahead and simply freezing it as well with some foil on top after the chocolate freezes.

    It's a nice recipe in that you can use any type of cake or ice cream that would be popular in your house. You could even buy a pre-made pound cake or other type of cake, cut that into the pieces you need to line the bowl, saving even more time.  

     

  • Jefferson Davis Pie (the first one).  Tastes and smells just like Christmas.  Serve with vanilla ice cream.  Stays good at room temp for about a week.

    I discovered it earlier this year in an ancient church cookbook and my family went nuts for it.  They say I'm not welcome at Christmas if I don't show up with it :)

  • Pecan pie!! One of my favorites and really easy to mix up. This is the recipe I use, the dough can be fussy but the filling is devine.
