Fussy chocolate

I know this is WC related, but I need an answer quick and there's more ppl on this board...and chocolate is everyday life, right? I'm making DH puppy chow but I've wasted two bags of chic chips now bc when I melt the PB and chocolate and butter, it just gets thick and unmanageable. Is there a way to bring the chocolate back to life to make it melts again, or should I go buy another bag...again?

  • No advice here...sorry! I always throw out the chocolate I ruin.  Are you melting it in the microwave or stovetop?

  • Microwave...it's something I've done dozens of times, but I've never added butter before and I think that's the problem. But almost all the recipes call for butter so I feel like I shouldn't be having the problem

  • I've never melted chocolate in the microwave. Maybe heat the chocolate sepretly from the butter and peanut butter. Then mix them after? I've never made puppy chow before either so I'm not much help.

    Try adding some solid shortening (crisco) a little at a time.

    Maybe it's getting too hot?  Try shorter bursts in the microwave, stir it well in between. 

    Why change your recipe now???  Go back to the recipe you like that works for you.

  • Easiest way to manage this issue is bring a pot of water to a boil and put your chocolate in a metal or Pyrex glass bowl on top using a spatula stir until managed. Then add your ingredients to finish it off. 

     That advice from a German chocolatier. 

     

  • For the record you risk less burning your chocolate this way instead of microwaving it which can damage the chocolate.
