healthy breakfasts in the car

any suggestions on healthy breakfasts on the go other than a protein shake?  I was having a nutrigrain bar, but I don't think that's the best choice, so I've been having an english muffin with peanut butter.  I need to have my coffee, so I don't want to be doing 2 drinks (protein shake and coffee).  Any suggestions?

BTW, I'm up at 5:45 to get myself and 2 kids out by 6:30, if I get up any earlier it's going to be to work out.  I drop them off at daycare at 7:00, drive 10 min to my school, and start teaching my 1st class at 7:30, so the only time to eat is the car

  • I used to prepare steel cut oats on Sunday nights and it would last me 3-4 breakfasts that week.  You just put a blob in a coffee mug, add milk and honey and pop it in the microwave.  You can garnish with fruit if you have any.  

    You need a spoon, so if you have a crazy commute it might not work but I managed.

  • I recently discovered Luna bars and I LOVE them! They are whole nutrition bars for women and are around 180 calories. Pair one with an apple or another fruit and you'll be set!

    You can get them at Target and CVS usually has a few kinds. At both, you are able to buy them individually, rather than by the box. This way you can find the ones you like before you commit to a whole box. I think the Targets around here sell them for like $1 each. I really like White Chocolate Macademia, Chocolate Dipped Coconut, Iced Oatmeal Raisin, Caramel Chocolate Brownie... the only one I didn't particularly enjoy was Lemon Zest.

  • Special K flatbread sandwiches have been my thing recently.  I nuke it at home and then eat it in the car.

  • OMG! I love Luna bars. They have 12 grams of protein per bar, and they taste fantastic. I am the type of person who would rater eat dessert than a meal, but with Luna bars I can stay on track with my weight loss goals and still get my sweet fix.

    PS: Cookie dough Luna bars are my favorite!

  • I always used to make an egg sandwich in the morning, english muffin, fried egg, and a slice or 2 of deli turkey. (you can substitute egg whites if you want). High in protein and gives you some carbs in the morning. Generally only takes about 5 minutes to make.
  • A hard boiled egg and an apple, or just the hard boiled egg white and an apple is a nice dose of protein and fiber without a lot of calories.

    I make these! For real they only take 5 min! I use a light english muffin, 1 egg, & 1 slice of reduced fat cheese. Toss the english muffin in the toaster, toss the egg in the fry pan, pack up my lunch or start up my car (gotta get it warmed up in WI!). Grab the english muffin, slide the egg on, top w/cheese, wrap in paper towel Bing.Bang.Boom.Done. out the door.

    I will say though that its important to note that if you are going to use real eggs to make sure that when you cook it long enough so the egg yolk gets essentially solidified!! I've had it happen to me numerous times where I'll take a big ole bite as Im driving, & yolk will drip out onto my jacket & my seatbelt! Huge mess! Lol
