After Baptism Luncheon Menu Critique

There will be I?m guessing 35 people to show up five of which are under 13.

I always seem to put out TOO MUCH! So this time around I?m trying to cut back on some items - (not getting 4 large pizzas)

Do you think this is too much still, if so what should go?

Or is it not enough now? What should be included ? I?m thinking it has to be either made the day before so I can just take it out after we get home from church.

 

This is what I?m thinking so far:

 

Main Items

-Deli meat and cheese platter with assorted breads and rolls

-24 or 36 pieces of fried chicken from Popeye

 

Sides/Apps

-Veggie Tray

-Fruit Salad

-Buffalo Chicken Dip w/ chips or crackers

-Pizza Poppers

 

Desserts

-Costco Cake

-Cookie Cheesecake Bars or Chocolate Chip Cookie Pie

-PB Squares  or Pecan Pie Bars

  • My advice- have a few things ready to go as soon as you walk in the door.  People will be hungry and this gives you a chance to gather yourself and get things set out. 

    So for apps: veggie tray, a dip of some sort, maybe some cheese,

    Is there a reason you are doing fried chicken?  I like fried chicken for a picnic, but it doesn't seem right for this occassion. I'd stick with the deli trays and maybe even switch to premade sandwiches.  35 people moving through a line making their own will be a cluster.

    If nothing else you need more sides.  Fruit and veggies just isn't enough.  If you don't want your oven on while you're gone get out a crockpot or borrow one.  Make some mac and cheese or cheesey potatoes.  Something starchy.  Then I'd add a salad.  You can make a 7 layer salad the day before and then you also don't need to worry about dressings. 

  • Working off your idea/menu listed, and added a few suggestions

    Apps- Veggie Tray, Buffalo Chicken Dip, Pizza Poppers...Maybe take away the pizza poppers, and just do a large cheese tray.  I would have things that I can move from my fridge to table.  Better yet, enlist a friend to help with this job.  So, you aren't stressed upon arrival. 

    Meal- Sandwich Tray.....Good idea, but I agree this is a "traffic jam."  Thoughts on a spiral ham and/or hot roast beef sandwiches?

    Sides- Move the fruit salad here.  If you want to have move from fridge to table items, go with green salad, pasta salad, and maybe potato salad or another heavy item.  If you can use crock pots, I would say mac and cheese or scalloped potato ideas.  There are tons of crock pot recipes out there.  Definitely need a veggie or two along with some sides with "substance."

    Desserts- Cake and Bars

    Love the premade sandwich idea esp. since our kitchen isn?t that big and 35 people is a lot.

    And for the crockpot suggestions, not sure why I didn?t think of that since we have 3!

  • Since you have 3 crockpots, what do you think of your mains being pre-made sandwiches and soup?  Healthy and filling and great for the season.  Add the various apps and sides 6 suggested and you're all set.

    I would probably skip the sheet cake.  I don't know a single human who actually likes deli sheet cakes.  People tolerate them, but no one ever goes, "Oh, yum!  Store-bought cake!", ya know?  Hostesses buy them because they think it's expected, but...why?  I think your two ideas for bars/cookies sound way better.

    Hi:

    if you have 3 crockpots that makes this easy!   I had a November baptism and I made 2 soups (butternut squash and a seafood chowder).  I made before church in the morning and kept warm in the crockpot while we were at church.  I made a big green salad and had some great, crusty bread to go with the soup.  I had a fruit tray and antipasto platter as well.  Worked out really well and everything was already made when we got back.

    You could do chili or french dip sandwiches as well.
