Hi Everyone!
I need some good freezer/Crockpot meals. I am working full time and decided to go to school full time. My husband has been fending for himself but I miss cooking and feel like I'm slacking. I have Monday off so I'm hoping to find some good meals so I can cook and freeze so we can eat something good!
I would love to hear if you guys have anything that would help!
Thanks!!
Re: Dinner Ideas
you don't have to limit yourself to freezer/crockpot.
many times, you can cook various things that will last in the fridge for at least 3-5 days. soups, stews, roasts, veggies, pastas -- pretty much anything!
for example, you could do bbq chicken in the crockpot the first night, and then on night 2 cut up some of the leftover chicken, boil some elbow pasta (throw some peas in there too!) for a bbq chicken/pasta dish. easy dinner #2 in about 20 minutes tops.
if you do lemon/pepper chicken, that can be cut up into salads, sandwiches, etc (which all would go great with soup for dinner!)
my mom used to make a rice/garbanzo bean dish (pretty much just sautee it all with chicken broth) by the fridge-full. makes a great meal with a green salad, and is easy to package for lunches, snacks, or leftovers. day 2 or 3 could be pairing it with meat done in the crockpot.
bottom line - you can get away with cooking big things every few days to get you through your busy days. you could cook on Sunday to last you through monday/tuesday. cook on wednesday to last you through thursday, and then cook again on friday.

There are so many slow cooker and freezer meal blogs out there too though. You can find many of them on Pinterest. I just posted a lasagna slow cooker recipe on my blog yesterday and it was oh so good.
I agree with the poster that suggested making something one day and repurposing it into a different meal. You could do something in the slowcooker and then repurpose the leftovers (ex: beef or chicken for sandwiches one night, then put it in tacos or on a pizza the next night, etc.) And yes Pinterest is a good place to look as well.
Here are my slowcooker favorites from my blog:
Italian Beef Sandwiches
French Onion Soup
BBQ Pulled Pork
Pizza Chili
I have found a lot of recipes from A Year of Slowcooking.
And here is my Pinterest link. I don't have a slowcooker board but have several slowcooker recipes on my various food boards (beef, chicken, etc).
