Favorite panini recipes?
My friend is coming over for a birthday dinner on Sunday and when I asked her what her favorite thing to eat is she said that currently it is paninis. I was able to find a really nice, inexpensive maker on craigslist but am now looking for recipes. I was thinking a "make your own panini bar" or something like it. It will be just my family and hers so nothing huge. Any recipe suggestions or things that would be good for the "bar"? Thanks!

not all panini (plural is not paniniS, but panini) are hot and/or pressed but my fave warm ones are super fresh buffalo mozzarella, really really ripe tomatoes (no seeds or watery stuff), fresh basil, evoo and balsamic. the reuben is another of my faves.
i mean you can basilcally put any sandwich on the press and heat it and there are thousands of combinations. get yourself some great italian cheeses, speck, mortadella, salumi, olive oil, greens and breads and have some fun. what does she like?

I think a panini bar would be wasted on so few people...
So I would pick one or two paninis and make them
just think of different sandwich combos'...you can do tomato, mozzarella, pesto
brie, ham, apple
mac n cheese and pulled pork
bacon, cheddar, avocado
