What's cooking this week ladies? I feel like I spent most of the weekend in the kitchen!
Monday: steak fajita quesadillas with salads
Tuesday: Pierogies that I made and froze on Sunday and sauteed carrots.
Wednesday: crock pot bbq ribs and peas
Thursday: Grilled chicken, couscous and whatever veg we get with our CSA.
Friday: leftovers or grilled cheese or something
Saturday: I'm going to a Pinterest party. It's apps and desserts. I'm bringing homemade cinnamon rolls.
Re: What's Cooking?
You make your pierogies from scratch? Would you mind sharing it because they have to be amazing.
I'd love to have a Pinterest party. Very jealous!
I don't really have much of a meal plan this week. I made a crap load of meatballs yesterday in gravy, as well as a couple of strombolis stuffed with Italian lunch meat. The leftovers should get the two of us through the first half of the week, and then maybe shredded crockpot chicken tacos for Thursday & Friday. Fingers crossed that we go out for dinner on Saturday night.
Not the healthiest of weeks, but at least everything is delicious!
DH was nice enough to do the grocery shopping Sat night so I didn't have to yesterday in the snow and while I appreciate it greatly, I didn't get a chance to really plan so he just grabbed some sale items, this is what I have, open to suggestions! And our grill broke last week
Mon- bone in pork chops cooked ???, yams, salad
Tues- whole roasted chicken and ???
Wed- some type of pasta with chicken in ???? sauce
Thurs- fish for us and leftovers for kids
Fri- beer and brats at GTG!
Sat- we are going to attempt to cook a nice early V-day dinner together once the darlings go to bed, no clue hat yet

Ok so full disclosure this was my very first time making them! I trolled the internet until I found a somewhat suitable (aka easy) recipe to follow. I used this recipe for the dough and the actual process of making them (link) For the filling, I just sort of used whatever I had in my fridge. In this instance I had 3 potatoes, about half a cup of ricotta cheese, a handfull of mozzarella and a few slices of crumbled bacon. I made a dish for the hubs and tasted one. They were pretty good! I just forgot to season the filling!
Absolutely. Just watch and make sure they don't get too thin.
Due to my recent food aversions, I've been on a limited diet. I can still do most Italian food, so our menu this week is heavy on that:
Last night--Out to dinner with friends
Tonight--ravioli
Tomorrow--Lasagna with spinach and ground turkey
Wednesday--BBQ chicken pizza
Thursday--Some other kind of pasta
Friday--GTG
Weekend--not sure
I'm going to be out of town for most of the week, but I did Salsa Cha Cha Chicken in the crock pot today. I don't know what I would do without the crock pot some weeks.
0602 -- speaking of Pinterest, I still have all of your mimosa bar stuff!
Mon - we had a mish-mash of random items thrown in a baking dish...Italian sausage, potatoes, onions and asparagus with some oil and seasonings. It was pretty good. easy peasy
Tonight - teryaki salmon with sweet tater fries or rice, sugar snap peas
Weds - leftover lasagna from the freezer
Thurs - random leftovers
