Carne Asada in the crockpot?

Yup! I did it, and it was delish! It wasn't the same as doing it on the bbq, but it was easy and no muss, no fuss! I just bought the pre-seasoned asada from Albertsons, about 2.5 lbs.

I added a little bit of oil to the bottom of the crock pot and added 3 corn tortillas (enough to cover the bottom). I put the asada on top of the torillas and added 2 cups of water and 1/8 cup of lemon juice. I cooked it on high for 2.5 hours. When it was done, I took it out, chopped it up, and put it on warmed corn tortillas with cheese and tapatio. And it was soooooooooo good.

It was enough to feed DH, his buddy, and me. I wish there were leftovers. :-(
