Meal plan, catch up with old friends you haven't seen in awhile, do some Pinterest projects, read a book, window shop (or real shop) at the mall.
If you don't have kids and can leave anytime you want you could
go for a walk
catch up with friends
go do something you have always wanted to do but your husband isn't fond of
pick a hobby, any hobby you think you might enjoy, and spend maybe 20 bucks tops and do that hobby
workout
have a marathon of your favorite show
go shopping
start a blog
go out dancing with friends
pick a class and go do it
Are there any house (apartment or condo) projects you can undertake? I recently took up sewing which is much easier when you don't have interruptions. May be good when your husband is out of town!
I agree that catching up with old friends is fun too. Do you have any shows that you and your girlfriends both watch (maybe The Bachelor!)? You could plan a dinner for them and have them come over to hang out.
Other ideas...you could rent a movie. Cook and freeze some food so that you have it for the busy weeknights when you don't want to cook.
Last idea for today...start a blog! Or...check out mine

From a woman's stand point I'm the one out of town on military leave a lot. My husband now engages in sand volleyball, hunting, fishing, and of course time with the kids.

My husband and his brother who married my BFF both work offshore. Her husband just got back from being gone TWO MONTHS! My husband will be gone three weeks this Saturday. I know how you feel. I am a huge shopper and fashion and decorating are my hobbies so this is costly but I find a way to make it work.
Here are some things that I do to keep busy.... hope you can find comfort in these.
*I rent a lot at Redbox. One movie a night in bed with the dogs.
*Catching up with friends, if they can (they have families and kids)
*shopping
*Hang out with my mom/dad (they are separated)
*I do a lot of Pinning on Pinterest which leads to a lot of DIY and decorating and renovating for my home (THIS IS THE BIGGEST PART OF WHAT I DO WHEN HE IS GONE)
*Re-Organize!
*Garden (Lowes and Home Depot personnel can help, you dont have to be an expert)
*Walk w or w/o the dogs
*Elliptical workout (we have one but you could join a gym)
*Sit on back porch and drink coffee (daydream)
*Me time! Take a bath, shave, wash hair, try that thing in the back of your cabinet that you haven't used, curl your hair, etc.
*Mani/Pedis!
*Go have a massage
*Watch your friends/siblings children if you are into that
*Give your dogs a bath
*Wash your car
*Plan a vacation! (This is what I am doing now)
*Plan a budget
*Clean your garage
*Clean out your closet (consign your clothes for extra money = vaca!)
*Go ahead and go to the eye doctor you have been putting off forever...
*Go to Hallmark and buy all the birthday, anniversary, etc. cards you will need for the next several months or YEAR.
*Go BUDGET grocery shopping. This should take at least 2 hours
*Go to a movie (try by yourself if you can)
*Go for a bike ride
*Download songs on your IPod
*Skype with your hubby
*Plan a garage sale
*Clean your home (we have a maid so this is out for me)
*Line your kitchen cabinets
*Clean your refrigerator out
Most of all find something that you love, something that you can throw yourself into something that you will enjoy getting to do as soon as you get off from work. You will find it. Think outside the box and if you havent yet join PINTEREST you will not regret it.
